What Do the Different Breadmaker Capacities Mean?

Zojirushi breadmakers come in two convenient loaf sizes:

  • 2-Lb. loaf (Ideal for Families)

    Models BB-PDC20 and BB-CEC20 produce a traditional, horizontal loaf ranging from 1-1/2 to 2 lbs:

    • Makes approximately 8 sandwiches per loaf
    • Dough course prepares enough dough for two 12" pizzas
  • 1-Lb.loaf (Perfect for Smaller Households)

    Models BB-SSC10 and BB-HAC10 produce a compact, vertical 1-lb loaf:

    • Makes approximately 5 sandwiches per loaf
    • Dough course prepares enough dough for one 11" pizza

How to Bake Bread Using a Breadmaker

Baking fresh bread at home couldn't be simpler with Zojirushi breadmakers. Follow these easy steps:

  • 1. Attach Kneading Blade(s)

    Ensure blades are firmly attached to the baking pan. A slight wiggle is normal, but blades must sit flush at the bottom.

  • 2. Measure Your Ingredients

    Use fresh ingredients and measure accurately. For consistent results, a digital kitchen scale is recommended.

  • 3. Add Ingredients

    Place ingredients into the baking pan in the correct order as specified by your model's instructions or the provided recipe.

  • 4. Select Course and Press START

    Choose the appropriate baking course, and let your breadmaker automatically knead, proof, and bake your loaf to perfection.

Troubleshooting: Why Didn’t My Bread Turn Out Right?

A Zojirushi breadmaker is as close as anyone can get to the ultimate in simple, one-touch bread baking. But of course, there are some things we know that can still go wrong. Here are a few:

  • Collapsed or sunken loaf (rising and falling)

    Cause: Too much yeast, sugar or water, too little salt, or high altitude.

    What you can do: Reduce yeast by 1/8 to 1/4 teaspoon and use cold water.  Continue to reduce incrementally. Or increase salt, or decrease sugar or water.

  • Short, dense, or dark loaf

    Cause: Too much flour (or other dry ingredients) or not enough liquid.

    What you can do: Reduce flour or increase liquids.

  • Lopsided loaf

    Cause: Too much flour (or other dry ingredients) or not enough liquid, or recipe size too small.

    What you can do: Reduce flour or increase liquids.

  • Lumpy loaf

    Cause: Too much flour (or other dry ingredients) or not enough liquid.

    What you can do: Reduce flour or increase liquids.

  • Added ingredients didn’t mix

    Cause: Too much flour (or other dry ingredients) or not enough liquid.

    What you can do: Reduce flour or increase liquid.  When dough is too dry, added ingredients like nuts and raisins cannot penetrate the dough ball.

  • Unmixed ingredients

    Cause: The kneading blades were not installed properly, or kneading blades have worn out.

    What you can do: Install kneading blades before adding ingredients. If the kneading blades don't catch when turning with fingers, they are worn out and need to be replaced.
